History

El Caballito Cerrero was created in 1950 by Don Alfonso Jiménez Rosales, a co-founder of Herradura who struck out on his own after a family falling-out, taking production to the Santa Rita distillery in Amatitán, built in 1873 by his father-in-law. The name evokes the unshod, untamable horse, a fitting emblem for a house that refused to follow the industry's direction. Still run by the Jiménez family, it distills fully mature Amatitán agave including the heritage chato variety, and now bottles as Destilado de Agave rather than tequila.
