PM Spirits Tequila

History

PM Spirits is the Brooklyn negociant house of Bordeaux-born Nicolas Palazzi, mentored into the guarded world of artisanal distilling by a Cognac-region family friend. Its Single Oven tequila, first released in 2022, was developed with Jalisco veteran José Luis Gutiérrez: each batch comes from a single brick-oven load of estate-grown agave averaging six years of age, double distilled in copper pots and bottled at 40% and 55%.
